About Pont St.
This September, Belgraves, the boutique Thompson Hotel, will launch Pont St., a contemporary seafood restaurant with chef and author, Sophie Michell – currently one of the youngest female executive chefs in Britain – at the helm.
Located in the heart of Belgravia, Pont St. will offer a menu that showcases Sophie’s distinct style of seafood, as inspired by her time spent in California and Australia, and her time living in the
Mediterranean.
Aron Harilela, owner of Belgraves, says: “Sophie’s experience and passion inform her cooking, with her dishes succeeding in being healthy yet delicious. Pont St. will be the perfect platform for Sophie to showcase herfresh approach to food.”
With a real passion for healthy, lighter fare, Sophie’s menu will pave the way for an eclectic range of dishes ranging from crudo, small plates, starters, salads to mains comprised of fresh seafood prepared a la plancha. Menu highlights include sea urchin, chilli and garlic spaghetti with bottarga shavings; baked spiced Cornish crab with jalapeno hollandaise and sour dough croutes; and poached sea trout with oyster mayonnaise, cucumber pickle and warm crushed new potatoes.
For the more carnivorous, a selection of meat specialties such as the Gloucester Old Spot pork chop with celeriac gratin, apple jelly and ‘Waldorf’ salad will hit the spot, and pretty desserts including the elderflower jelly with honey parfait, strawberries and shortbread will keep the sweet-tooth satisfied.
Store cupboard items such as pasta, jams and pickles will all be lovingly handmade at the restaurant.
As executive chef, Sophie, with the team at Belgraves, has created a restaurant that also pays tribute to the spirit of the vibrant Pont Street community, both past and present, particularly recalling the legendary Pont Street oyster shucking competitions.
Sophie, 31, began her career at the tender age of 14 and since worked at some of London’s finest Michelin-starred restaurants, including The Greenhouse and The Lanesborough. At just 19 years, she was nominated for The Craft Guild of Chefs ‘Young Chef of the Year Award’, and Sophie’s professional experience placed herin great stead to undertake corporate and private catering roles, for A-list clients.
Sophie has also released several successful cookery books and has been a regular food columnist in top magazines and newspapers worldwide.
Created by acclaimed British designer Tara Bernerd, the interior of the 80-cover restaurant will feature charcoal emerald velvet banquettes and cream leather chairs, with a mixture of tables in studded dark mahogany and white marble throughout. White linen curtains and smoked mirrors will frame the room.
